Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup red fruit jam (e.g., cherry or strawberry)
  • 1 egg, beaten egg wash (optional)

Instructions

  • Preheat your oven to 180°C (350°F).
  • To make the pastry, combine flour, sugar, and salt in a mixing bowl.
  • Add cold butter, cut into cubes, and mix until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk the egg and add it to the flour mixture, combining until a dough forms.
  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out the chilled dough on a floured surface to about 1/8 inch thickness.
  • Transfer the rolled dough to a tart pan, pressing it gently into the edges.
  • Spread a generous layer of red fruit jam evenly over the crust.
  • Roll out the remaining dough and cut it into strips. Weave the strips over the jam to create a lattice pattern.
  • Trim any excess dough and brush the top with an egg wash for a golden finish.
  • Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
